How many times have you heard people talk about why they can’t eat healthier? Sure it’s usually easier to get fast food but there are unlimited meals that are easy and inexpensive. Additionally I really enjoy using fresh ingredients rather than packaged. I admit I use a lot of frozen veggies at times but that’s only because I can’t make it to the store frequently enough to continuously stock the fresh produce. Keeping with Michelle‘s theme of meals under $5.00 this was our dinner tonight.
Last week at Fred Meyer they had Fresh Cod on sale for $3.99 per pound. I asked how much a whole fillet weighed and was surprised to find out that it wasn’t even a pound. Apparently Cod is not very dense therefore doesn’t weigh much.
Earlier in the week my husband zero’d in on the Chayote Squash at Winco. They were $0.88 each.
I cooked the Cod in a little Olive Oil, Lemon juice and pepper. I cooked the Chayote in Olive Oil, minced garlic and salt & pepper. Served with some brown rice and Voila! The entire family ate for less than $5.00 and our meal was healthy and easy.
