Get your veggies in a smoothie!

So you may have picked up from my previous posts that I am a freaky eater. I have issues with texture and color and mixing foods. It is very important to me that I don’t pass my weird issues onto my son. Now that he’s getting older he’s starting to question where my veggies are while he’s eating his. I can’t hide and lie to him forever, he’s too smart for that. I’ve heard so much about how yummy smoothies are and I’m told you can mix lots of veggies into them. Tonight I decided to give it a try. I used what I had in the house and a recipe from a friend (Lisa H).

Get your veggies in a smoothie!

Here’s what I made:
2 cups Spinach
1 cup Cold Water
1 Banana
A handful of mixed berries – I had frozen blueberries
1 scoop of Vanilla Protein powder
Get your veggies in a smoothie!

Blend until smooth. Now the color is not too appetizing. It’s definitely a mind over matter thing. I closed my eyes and tasted it. Absolutely Yummy!!!  The colder the better and the amount was too much for one person. I think it’s more of a 2 person serving. The taste was great but I had to really concentrate to not think about the color. My son liked the taste but he couldn’t get over the look. He said “smoothies are supposed to be pink”. I think he’d do great with a fruit smoothie but I don’t know any other way to get the veggies into a pink smoothie! But if I’m being honest, I’m the problem, not him. So far he’s a pretty good veggie eater!
