Chicken thighs are a great inexpensive meal that you can make for $5 or less. There are so many things that you can do with them, bake, simmer in sauce, chicken, and dumplings. I only buy them when they are on sale, most of the time it’s $.99 per pound, I’ve even seen them as low as $.88 per pound. I buy a large package that usually has 12 thigh’s and I divide the package into 2 separate meals for my family of 3. I package 6 thigh’s into each freezer bag. That’s roughly $2.50 per meal then I add a vegetable and a starch.

Here’s how I make Teriyaki Chicken Thighs, Rice & Corn less than $5

6 Chicken Thigh’s $2.57

2 Cups Rice $ .50 (I buy the 25lb bag of rice at Costco for $11.99, rougly 55 cups in the bag)

Birds Eye Steam Fresh Corn $ .75

Teriyaki Sauce $ .25 ( I used 1/4 of a bottle that I paid $1.00 for in the clearance section)

Total $4.07, this fed the 3 of us and my husband had leftovers for lunch the next day.

Chicken thighs are significantly higher in fat than chicken breasts, however, they are more flavorful and less expensive. To reduce the amount of fat I remove all the skin and any excess fat. I brown the thighs on each side and then pour the marinade over the top, cover and simmer for 30 minutes or so. I turn them every once in a while so both sides get a lot of the marinade flavoring. You don’t have to use a lot of marinade, a little goes a long way. When it’s done I use the marinade left in the pan to flavor the rice.
