I read somewhere that if you don’t have a roasting rack you could use a bundt pan and a cookie sheet to roast a chicken. I don’t have a roasting rack so when I roast a whole chicken it just sits in the grease in the bottom of the pan so I tried the bundt pan last night. I just put the cavity of the chicken over the cone part of the bundt pan and then just set it on a baking sheet, it was easy to put the rub on the outside because it was standing up so I could get all sides seasoned easily.
I think it turned out good and check out all that fat that dripped into the bottom of the pan.
