I had half a basket of grape tomatoes that were starting to shrivel and I was feeling bad that we hadn’t used them so I decided since they already looking like they were starting their journey toward sundried tomatodom (I know that’s not really a word) that I would help them the rest of the way.
I just sliced them in half and put them on a cookie sheet. I put them in the oven at 200. I could have added some sea salt but I forgot, oh well.
Here’s how they looked after about 4 hours, just make sure they are dried all the way through.
You can either store them in a plastic bag like this or put them in a jar with olive oil and keep them in the fridge. They look gorgeous and they taste so good and so simple to make, I can’t wait to put them in a pasta dish or pasta salad!
